Easy Chorizo Chili

This hearty chorizo chili comes together quickly and delivers big flavor with minimal effort. Made with Denmark Foods Pork or Beef Chorizo, this one-pot chili relies on the chorizo’s authentic seasoning to create a rich, satisfying dinner that’s perfect for busy weeknights.

INGREDIENTS

  • 1 lb Denmark Foods Pork or Beef Chorizo
  • 1 small onion, finely diced
  • 1 (28-oz) can crushed tomatoes
  • 1 (14-oz) can fire-roasted diced tomatoes
  • 1 bottle beer (your choice) or broth
  • 1 (15-oz) can beans, drained and rinsed (red beans, black beans, or a mix)
  • Olive oil, for cooking
Optional Toppings
  • Grated cheese
  • Fresh cilantro
  • Sliced jalapeños
  • Sour cream
  • Diced onions

DIRECTIONS

  1. Heat a large Dutch oven or heavy-bottomed pot over medium heat and add a small amount of oil.
  2. Add diced onion and cook until softened, about 3–4 minutes.
  3. Add chorizo and cook until fully browned, breaking it up with a spoon or spatula as it cooks.
  4. Stir in crushed tomatoes, fire-roasted tomatoes, beer, and beans.
  5. Bring to a gentle simmer, reduce heat, and cook uncovered for 45–60 minutes, stirring occasionally.
  6. Taste and adjust as needed. Serve warm with your favorite toppings.
