Sweet Potato & Chorizo Skillet with Eggs

This hearty one-skillet meal brings together roasted sweet potatoes, savory Denmark Foods chorizo, tender greens, and perfectly cooked eggs for a simple, satisfying dish you can enjoy any time of day. Packed with bold flavor and fresh ingredients, it’s an easy option for breakfast, brunch, or a quick weeknight dinner.

INGREDIENTS

  • 1 lb Denmark Foods chorizo
  • 2 medium sweet potatoes, peeled and diced
  • 1 small bell pepper, diced
  • 1 small onion, diced
  • 2 cups fresh spinach or leafy greens
  • 4 large eggs
  • 1–2 tablespoons olive oil
  • Salt and black pepper, to taste
  • Green onions, sliced (for garnish)

DIRECTIONS

  1. Heat olive oil in a large cast iron skillet over medium heat.
  2. Add diced sweet potatoes and cook for 10–12 minutes, stirring occasionally, until tender and lightly browned.
  3. Add onion and bell pepper to the skillet and cook for 3–4 minutes, until softened.
  4. Add Denmark Foods chorizo and cook until browned and cooked through, breaking it up as it cooks.
  5. Stir in spinach and cook just until wilted. Season lightly with salt and pepper if needed.
  6. Using a spoon, create four small wells in the mixture and crack an egg into each.
  7. Cover the skillet and cook for 5–7 minutes, or until egg whites are set and yolks are cooked to your liking.
  8. Remove from heat and garnish with sliced green onions before serving.
