Sweet Potato & Chorizo Skillet with Eggs

INGREDIENTS
1 lb Denmark Foods chorizo2 medium sweet potatoes, peeled and diced1 small bell pepper, diced1 small onion, diced2 cups fresh spinach or leafy greens4 large eggs1–2 tablespoons olive oilSalt and black pepper, to tasteGreen onions, sliced (for garnish)
DIRECTIONS
Heat olive oil in a large cast iron skillet over medium heat.Add diced sweet potatoes and cook for 10–12 minutes, stirring occasionally, until tender and lightly browned.Add onion and bell pepper to the skillet and cook for 3–4 minutes, until softened.Add Denmark Foods chorizo and cook until browned and cooked through, breaking it up as it cooks.Stir in spinach and cook just until wilted. Season lightly with salt and pepper if needed.Using a spoon, create four small wells in the mixture and crack an egg into each.Cover the skillet and cook for 5–7 minutes, or until egg whites are set and yolks are cooked to your liking.Remove from heat and garnish with sliced green onions before serving.
